Chicken Sausage and Wilted Kale Pasta

Sundays are lazy days at my house this time of year. Sundays are reserved for football, food and much needed
down time before starting another work week. Last Sunday I had not planned my game day menu ahead of time and had to come up with something from what I had on hand. I live about twenty minutes from the nearest grocery store, a forty minute round trip was not on the agenda on lazy Sunday. Not to mention that would require me changing from my beloved yoga pants and tee shirt into attire that would make me presentable in public.

So after rummaging through the kitchen,I pulled together the ingredients for this chicken sausage and wilted kale pasta. I had some beautiful kale, fresh from the garden, that a friend had given me the day before. I usually keep pasta and canned tomatoes on hand for quick meals and occasions such as this. You learn to keep a well stocked pantry when there isn't a grocery store right around the corner! 

This dish came together in thirty minutes with minimal clean up. Talk about a great lazy day dish, this is at the top of the list. We also had leftovers for the next night which I put into a casserole dish, added a layer of mozzarella cheese to the top and baked until warmed through. Perfecto!

Chicken Sausage and Wilted Kale Pasta


16 Ounces Chicken Sausages – Cut into half moon slices*
16 Ounces Pasta – I used Penne
8 Ounces Kale – I stemmed and tore into smaller pieces, you could definitely use more if desired
1 Can Diced Tomatoes - Do not drain
3 Garlic Cloves - pressed or finely chopped
1 Teaspoon Red Pepper Flakes
1/2 Cup Water
1 Chicken Bouillon Cube
2 Tablespoons Apple Cider Vinegar
Salt and Pepper to taste, if desired
Parmesan or Mozzarella Cheese

Cook pasta according to package directions. Drain.

To a large pot add water and bouillon cube on medium heat. Once bouillon cubes starts to dissolve, add garlic and red pepper flakes.  Let simmer together for five minutes add kale, tomatoes and chicken sausages. Cover and heat through until kale starts to wilt about ten minutes on medium heat. Add cooked pasta and apple cider vinegar and stir to mix thoroughly. Serve topped with parmesan or mozzarella cheese.


*I used chicken sausages that were flavored with thyme and sage, they added quite a bit of flavor here. I would recommend using the herbed chicken sausages if you can find them. If you can't find the herbed chicken sausages, you may want to consider adding a half a teaspoon to a teaspoon of dried sage and thyme to this dish. Depending on your tastes for these herbs.
