Simple Cheesy Chicken Nachos

Simple cheesy chicken nachos, made with just five ingredients including the tortilla chips. An easy snack or pair with refried beans for a quick dinner.

I have been making these simple cheesy nachos for as long as I can remember. My teenage son requests these for dinner on the regular. I am usually happy to comply with this request; especially after a particularly
stressful day at work. Yesterday just happened to be one of those days. I am positive, my friends, that you know exactly the kind of day I am talking about. So as I was pondering dinner, after this mentally exhausting day, my son said, "How about your chicken nachos?" Ah, a perfect but not surprising answer from my favorite (and only) son.

As I was whipping these up, I thought I should share these on the blog. A quick, easy and five ingredient dish that everyone loves. Paired with refried beans and/or a salad and dinner is served. Yes, I must share this super simple dish that can make a dinner time decision easier.

So next time you are looking for a quick dinner fix, stressful day or not, give these nachos a try. Smiles and requests to make these again will ensue!

Simple Cheesy Chicken Nachos

Tortilla Chips
1 and 1/2 Pounds Pre Cooked Chicken – Diced or Shredded
2 Cups Quesadilla Cheese – Divided *
1 Cup Sour Cream
Fresh Cilantro
Cooking Spray

Preheat oven to 350 degrees.

Combine chicken, sour cream and one and one half cups of the cheese. Pour into a baking dish that has been lightly sprayed with cooking spray. Sprinkle top with remaining half cup of cheese and fresh cilantro to taste. Bake at 350 degrees for 20 minutes or until bubbly and cheese is melted. Sprinkle top with more fresh cilantro if desired. Spoon on top of tortilla chips or dip straight from the dish, your choice.

You can also top these with diced jalapenos for some kick.

*I have used cheddar, colby jack, pepper jack, and even mozzarella with these nachos; most any cheese will work and is delicious.
