One Pot Cheesy Taco Pasta

I don't know about you, but sometimes at the end of a super busy or stressful day I wonder where I will find the energy to cook a homemade dinner. Anybody out there that can
sympathize? Easy one pot meals are my best friends on these days. This is one of our favorites and pleases even the pickiest of eaters. I hope it will become one of your family's favorites too. I love to pair this with a can of black beans (drained and rinsed before warming). I serve them on the side for the non bean eaters that don't want them, but the hubs and I just add them to our dish. Yum!

Cheesy Taco Pasta

This recipe makes a large quantity, I get eight to ten servings from this recipe. Which means leftovers to pack for lunch the next day or dinner for another night that week. I love leftovers and don't mind them at all. Not a fan of leftovers? Freeze half for dinner at a later date. Heat and eat, it doesn't get quicker than that for dinner does it?

One Pot Cheesy Taco Pasta


2 Pounds Ground Beef 
16 Ounces Penne Pasta 
3 Cups Grated Cheddar Cheese
3 Cups Water
1 Cup Milk
1/2 Cup Chopped Fresh Jalapeno Pepper 
1 Can Diced Tomatoes – Drained
1 Recipe Taco Seasoning Blend as follows (For Two Pounds of Ground Beef):
1 Tablespoon + 1 Teaspoon Chili Powder
1 Tablespoon Cumin
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1 Teaspoon Paprika
1 Teaspoon Oregano
1 Teaspoon Red Pepper Flakes
1 Teaspoon Seasoned Salt
1/2 Teaspoon Sea Salt
1/2 Teaspoon Black Pepper


Brown ground beef with jalapenos in large pot over medium heat, drain fat from ground beef and return to pot.  Add taco seasoning mix, pasta and water; stir and bring to a low boil. Reduce heat to low, stir, cover and simmer for twenty minutes. Add milk, cheese and drained tomatoes; stir to combine and heat through for five minutes or until cheese is thoroughly melted. Remove from heat and let sit for five minutes.

Top with fresh cilantro and/or sour cream if desired.

  1. Tacos, pasta style...I love it! This reminds me of the other week when I planned to make tacos, and I bought everything I needed...except the taco shells! Will definitely have to try this (thinking of using beans instead of the beef to make it vegan).

  2. I LOVE one pot dishes....my hubby says I am the queen of them....lol. I just don't see the point in using every pot in the kitchen to make one meal.
