I wanted to have this post up this weekend, Monday at the latest, but the following chain of events unfolded.
An ER visit with my dad Friday night that lasted until the wee hours of  Saturday morning, a baking order involving 300 cookies and 300 brownies, and an unexpected (but much welcome) visit from my mother-in-law and sister-in-law.

My dad is fine, just banged up and sore, he slipped on a patch of ice on his porch. He was in pain, I could hear it in his voice over the phone. He said his back hurt right above his hip. I work in long term nursing care, my immediate thought - fractured hip. I insisted on a trip to the ER to have it checked out. This turned out to be the looongest ten hours of my life. I dared not touch anything or even go to the restroom for fear of picking up a bug. The sniffling, wheezing and coughing were rampant in the waiting area and beyond. In the midst of my heavy eyelids, full bladder issue and the worry of whether or not my dad had broken bones; my husband did manage to get a giggle out of me. About 1AM Saturday morning, he turned to me and said with a smile, "This is the latest we have been out in a while." A comment on our status to barely stay awake past 11 now that we are into our forties. I was exhausted all day Saturday, but I wouldn't have slept Friday night anyway until I knew all was well with my dad. A trip to the grocery store and few more errands that needed to be done depleted all the energy I could muster for Saturday.

I started my baking early Sunday morning. I wanted to finish it all; but, no way, no how that was happening. My lack of sleep was still playing havoc with me, not to mention the hour that was lost Saturday night due to the time change. Monday was going to be a challenge. A few hours at work in the morning, lunch and antiquing with my husband and in-laws made for a lovely afternoon; then on to the finish line. I finished my baking late Monday night. I couldn't believe I had managed to squeeze everything in and still stay sane, well partially sane at least.

Tuesday evening, after work, was spent laying on the couch dozing on and off. Much deserved I think, just a personal opinion :) 

Wednesday evening and I am finally getting my blog groove back. Just in time to post this delicious corn beef and cabbage recipe. Thankfully, not too late for St. Patick's Day. This is a perfectly delicious dish to celebrate this holiday!

Three Mustard and Guinness Corn Beef and Cabbage

Recipe by Christy's Cooking Creations
Prep time: 30 Minutes
Cook time: 4 to 6 Hours


Ingredients
  • 3 to 4 Pound Corn Beef Brisket
  • 5 Medium Potatoes (Quartered)
  • 1 Large Onion (sliced into rings)
  • 1 Can Guinness
  • 3 Tablespoons Brown Sugar
  • 1 Tablespoon + 1 Teaspoon Whole Grain Mustard
  • 1 Tablespoon Spicy Brown Mustard
  • 1 Tablespoon Yellow Mustard
  • 1 Head Cabbage (Cut into chunks)
  • 1/2 Pound Baby Carrots
Cooking Directions
  1. Preheat oven to 275 degrees.
  2. In a medium bowl combine Guinness, brown sugar and all mustards, whisk together.
  3. Place brisket in a 5.5 quart dutch oven, place potatoes around brisket and onion rings on top.
  4. Pour sauce over brisket, potatoes and onions, replace lid.
  5. Place in oven for 3 hours.
  6. Remove from oven and add cabbage and carrots, replace lid and cook for 1 hour longer at 275 degrees.
  7. Use slotted spoon to remove vegetables and place in serving dish. Remove brisket and slice, place slices on top of vegetables.

Notes:
Can be prepared in crock pot, cook on high for 4-5 hours or low for 5-6 hours. Adding cabbage and carrots during last 1-2 hours of cooking time.

  3. Christy, this looks so yummy. We usually have this every year on New Year's Day. We have not had any yet this year. I don't know why. Maybe, we fix this some time next week. Thanks for the reminder!
