Chicken salad taken to the next level with fresh basil and walnuts.
|Basil Walnut Chicken Salad|
An old favorite with a new twist, chicken salad with basil and walnuts. Chicken salad with the perfect balance offresh, crunchy and moist. And so quick and easy to put together. I grilled my own chicken and while it cooled prepared all the other ingredients. Still took less than forty-five minutes all together. Just a smidge of salt and pepper on each side of the chicken. Place in hot grill pan for about six or so minutes on each side, depending on the thickness of your breast. I butterflied my chicken first so they were a little on the thinner side. You could make this even less time consuming by using pre-grilled chicken strips and dicing them. This is perfect on celery or stuffed in pita bread; and, yes, I tried it both ways. Quite good straight off the spoon too! I'll let you guess how I know that. The crunch from the walnuts and onions, balanced with the fresh basil and creamy mayo is a combination you don't want to miss out on. Easy enough for everyday. But with the red onion and basil adding eye-catching color to make a beautiful dish; it is lovely enough for that special occasion.
