Skinny Salmon Alfredo with Artichokes


Salmon, whole wheat pasta and artichokes come together for a lightened up version of alfredo, and in less than thirty minutes!

I love Alfredo, but sometimes I feel so guilty after eating it! But, when a food craving hits, it is hard to ignore. You just aren't happy
until it is satisfied. I wanted alfredo, but without the guilt. So, I set to work thinking how can I lighten up this usually quite decadent dish. Whole wheat noodles, half the cream and no butter was the verdict. Creamy and rich from just one half a cup each of cream and freshly grated parmesan cheese. Cajun seasoned salmon for a little spicy kick. Artichokes and fresh tomatoes for your veggie fix. You will never guess it is a scaled down version. The salmon on its own is delicious and makes a wonderful meal paired with a simple salad. Either way a simple and nutritous dinner on the table in less than thirty minutes. I don't know about you, but it doesn't get any better than that for me at dinner time!

Skinny Salmon Alfredo w/ Artichokes

For the salmon:
4 Salmon Fillet Cuts – I used frozen
Dried Dill
Garlic Powder
Cajun Seasoning
Olive Oil Cooking Spray

Preheat oven to 425 degrees.
Lightly spray a foil lined baking sheet with cooking spray. Place salmon on baking sheet and sprinkle with dill, garlic powder and Cajun seasoning. I used a light sprinkle of each, but this is all a matter of preference.  Season to you and your family’s taste. Spray a light coating of olive oil cooking spray on top of each fillet. Bake at 425 degrees about 12 minutes. Salmon will be done when it flakes easily with fork. While salmon is baking, make pasta.

For the pasta:
2 Cups Whole Wheat Penne Pasta
1 – 12 Ounce  Jar Artichokes – Drained and chopped
2 to 3 Small Roma Tomatoes – Sliced
½ Cup Heavy Whipping Cream
½ Cup Parmesan Cheese*
1 Teaspoon Parsley Flakes
½ Teaspoon Garlic Powder
Pinch of Pepper
Pinch of Salt

 Cook pasta according to package directions. Drain well. While pasta is draining, add artichokes to pot. You can use the same pot the pasta was cooked in. To artichokes add cooked pasta, whipping cream, parsley flakes, garlic powder, pepper and salt. Heat through for about 5 minutes. Add parmesan cheese, heat just until cheese starts to melt. Add pasta to bowls, place salmon and sliced tomatoes on top. Dinner is served.

*If at all possible use fresh grated parmesan, it is what used. I’m not sure what difference, if any, using the grated kind in the can will make.
